Peach Ginger Cobbler Granola

Bright peach and zingy ginger with a crumbly oat crust. We infuse fresh ginger by slow cooking it with our ghee and honey, then bake it into the base of our granola. We pair it with a vanilla bean "crumble topping" by blending together oats, almonds, pumpkin seeds, coconut, ghee, and honey, then toss in crunchy freeze-dried peaches. Summer dessert in granola form.
